Beet Pie

One of the volunteers in the Education Garden brought us a beet pie that she made from the greens of beets.  It was delicious so we needed to share the recipe! Enjoy!

Ingredients

  • Beet leaves (greens)
  • Onion
  • 2 Garlic cloves
  • Olive oil
  • Gorgonzola
  • Mozzarella
  • Locatelli
  • Nutmeg
  • Salt
  • Pepper
  • 4 eggs
  • Pastry Sheet

Instructions

  1. Chop leaves from beets very mall
  2. Cut up one onion and 2 cloves of garlic.
  3. Saute in 1- 1/2 teaspoon of olive oil.
  4. Transfer to bowl.
  5. Add cut up leaves and increase heat a bit.
  6. Stir in cheeses and a shaving of nutmeg.
  7. Season with salt and pepper.
  8. Whisk 4 eggs slightly; reserve one teaspoon; stir together with ingredients.
  9. Brush rectangle baking dish with oil.
  10. Use pastry sheet to line pan.
  11. Spread box over and top with another pastry sheet.
  12. Fold edges in and brush wit egg reserve.
  13. Pinch top and cover with foil not to burn.
  14. Bake 350 degrees F for 30 minutes or until golden brown.
