One of the volunteers in the Education Garden brought us a beet pie that she made from the greens of beets. It was delicious so we needed to share the recipe! Enjoy!
Ingredients
- Beet leaves (greens)
- Onion
- 2 Garlic cloves
- Olive oil
- Gorgonzola
- Mozzarella
- Locatelli
- Nutmeg
- Salt
- Pepper
- 4 eggs
- Pastry Sheet
Instructions
- Chop leaves from beets very mall
- Cut up one onion and 2 cloves of garlic.
- Saute in 1- 1/2 teaspoon of olive oil.
- Transfer to bowl.
- Add cut up leaves and increase heat a bit.
- Stir in cheeses and a shaving of nutmeg.
- Season with salt and pepper.
- Whisk 4 eggs slightly; reserve one teaspoon; stir together with ingredients.
- Brush rectangle baking dish with oil.
- Use pastry sheet to line pan.
- Spread box over and top with another pastry sheet.
- Fold edges in and brush wit egg reserve.
- Pinch top and cover with foil not to burn.
- Bake 350 degrees F for 30 minutes or until golden brown.
